Retarder proover cabinets, that can be disassembled , for small and big production for trolleys, mini rotors and frames.
Serial modular soluctions with tecnological characteristics thanks to 30 years of experience with pastry laboratories and artisan bread production.

PROFESSIONAL PROGRAMMED RETARDER PROOVER CABINETS FOR TROLLEYS OR FOR NORMAL PRODUCTION
• Professional, modular and desassembled structure, insulated with expanded polyurethane, 43kg/M3 of a 60mm tickness.
COMPACT: external grey non-toxic zincoplastic coating/internal stainless steel.
Comp life: external and internal in grey non-toxic zincoplastic coating.
COMPBASE: external and internal in grey non-toxic zincoplastic coating.
• Insulated floor with panels as the structure and reinforcement of 15mm and 350kg/m2 capacity. Covered in stainless steel 18/8 no sweeting (COMPACT).
• Insulated floor with special multifenolic material of mm15 no sweeting (COMPLIFE ).
• Without floor (COMPBASE).
• Equiped door with silicon gaskets, industrial perfectly sealing hinges and locks. I nternal kit with stainless steel trolley-guard guides for trolleys access.
• Cooling system with tropicalized units R404 and evaporator with electric defrosting sistem, warming sistem with stainless steel resistence.
• Only heating system (TCL).
• Mecanic Umidity producer with steam basin with level wather set, stainless steel resistance, controlled by electronic control card (COMPACT, COMPLIFE -TCL).
• Umidity producer with internal resistance in stainless steel for water evaporation of condense. Controlled by microprocessor card (COMPBASE).
• SEVENDAYS control board: Professional system for retarder proofer pontrol, programmed with 7 independent programs and 3 manual function.

• 1 step of controlled humidifier.
DIGITH SEVEN - Professional system for retarder proover control, programmed with 7 indipendent programs and 3 manual functions (cold-hot-baking delay) with the last generation microprocessor schedule.
Each program controls the following functions:
• blasting and preservation.
• pre-fermentacion
• 3 steps leavening
• baking delay
• neutral zone of the temperatures control, relative humidity control with probe and proportional reading,
buffer memory of the program in black-out case.
